For rowan berry juice from fresh fruit, pick the rowan berries after the first frost so that they do not taste too bitter. Pick them before the first frost, then put the berries in the freezer overnight. Pluck the berries from the stems and rinse with cold water. Empty the rowan berries into a pot and add water until all the berries are covered. Bring to a boil and simmer over low heat for 30 minutes.

Hang a large strainer in a pot and line with a straining cloth (muslin cloth). Allow the juice to drain. Then squeeze the muslin cloth with your hands to squeeze the remaining juice from the fruit.

Pour the rowanberry juice into carefully cleaned bottles, drizzle a little alcohol on top, light and seal immediately. Store in a cool and dark place.
