Carefully remove the stems from the rowan berries and rinse them. Dab them dry and leave them to soak overnight to remove the bitter taste.

Cut the apples into pieces, remove the stalk, fly and seeds.

Peel the oranges thinly. Mix everything with water, juice of one lemon and cinnamon and bring to a boil in a saucepan. Leave to stand for 10 min with the lid on, cool and strain through a fine mesh cloth. Mix the juice with the preserving sugar, bring to the boil and simmer on low heat for 3 to 4 min. Skim and fill hot into preheated jars. Seal immediately.
