For the rowan-quince jelly, pour the rowan juice and quince juice into a saucepan. Add the jelling sugar and bring to a boil. Boil the mixture for 4 minutes until bubbling, then do the jelly test. To do this, drip some of the jelly onto a cold plate. If it sets, the jelly is ready. If not, let the mixture cook a little longer.

Immediately pour the rowan-quince jelly into prepared twist-off glasses. Drizzle a little alcohol over the top, light and seal immediately. Place with the lid down on a tea towel and let cool.
