Rösti with Thyme and Smoked Trout

For the rösti with thyme, peel and coarsely grate the potatoes. Mix with the egg and thyme, season with salt and pepper. Shape the mixture into small loaves with floured hands.

Heat butter or clarified butter in a frying pan and fry the rösti in it until golden brown on both sides. Remove and drain on paper towels.

Portion the smoked trout fillets, cut the chives into small rolls. Mix crème fraîche with chives.

Place the rösti with thyme on preheated plates and top with a tablespoon of chive crème fraîche. Place a piece of smoked trout on top and serve immediately.
