For the hash browns, first peel and grate the potatoes and squeeze out the moisture by hand. Season with pepper and salt. Fry 20 small rösti in oil in a pan until very crispy and let cool.

Peel the shallots, chop finely and fry briefly with the pine nuts. Wash the spinach thoroughly, drain, add and cook. Season with pepper and salt and thicken with the locust bean gum.

Combine 2 hash browns with some of the spinach and fix them with the wooden skewers to make hash brown burgers.
