For Rösti, cook potatoes with peel in a little water at low temperature for 15 min. until not quite soft, drain, cool, peel and grate coarsely. Season well with pepper, caraway and salt.

Peel onion and chop finely.

Heat the clarified butter in a large coated frying pan. Remove the frying pan from the heat and turn the temperature to medium.

Sauté onions, add potatoes and shape into a cake about the thickness of a finger using a spatula. Fry for approx. 15 min. with the lid closed.

Now turn the Rösti to the other side: Loosen all around and at the bottom with the spatula. Tilt the pan to the side and slide the Rösti onto a plate. Place a second plate on top, turn the whole thing to the other side and slide the Rösti into the pan again.

Finish frying in the open pan over medium heat for another 15 min.
