For roasted veal stilt wheels, preheat oven to 200 degrees convection. Season veal stilt wheels with salt and pepper. Finely chop onion and garlic.

Place veal stilt wheels in a large roasting pan, sprinkle with caraway seeds, garlic and onion. Add a little water with gravy cubes to the roasting pan and roast in the oven for about 1/2 hour.

Turn the roasted veal stilt wheels over, close the roasting pan with a lid, if necessary add some more water and gravy cubes and finish roasting.
