Preheat the oven to 110 degrees.

Season the veal boar with salt and pepper and brown it well on all sides in two thirds of the olive oil. Cook in the oven on the rack for seventy-five to ninety minutes until pink.

Rinse the peaches, cut them in half, remove the pits and cut them into narrow wedges.

Sauté the shallots in the remaining olive oil, add the mushrooms and sauté. Add salt, the garlic clove pressed and cut into slices and rosemary and toss. Add the peach slices, douse with a little water, cook a little bit, finally add the butter and toss well.

Slice the veal boar into thin slices and arrange on a large platter, slightly overlapping. Place the mushrooms and peaches on top of the veal, sprinkle with sea salt and pepper and drizzle with olive oil and balsamic vinegar.
