For roasted turkey shanks, grate the herbs with sea salt in a mortar and mix with olive oil to make a paste.

Make several incisions in the turkey shanks, brush well with the seasoning paste and place on a paper-lined baking tray.

Roast in the oven at 200 °C for about 20 minutes. Then add the peeled, halved potatoes tossed in olive oil and seasoned with salt and rosemary.

Turn the shanks over and roast for another 30 minutes. Arrange the roasted turkey shanks with the potatoes and serve.
