Rub the meat firmly with a paste of garlic, salt and cumin, so that the whole meat is firmly rubbed. If possible, leave overnight so that this paste can be well absorbed. Grease the pan well with lard. At 180 °C, sear the piece well on all sides. Cover well with sliced onions. Periodically pour beef broth and roast at 160 – 180°C for 1 – to 2 hours (roasting time depends on the size of the piece of meat). When the roast is ready, add some butter flakes to the juice to enhance the aroma.

For the cabbage fritters, cut the cabbage head into small fritter-sized pieces. Peel and chop the onions. Also cut the bacon into cubes. Cook the dough fritters according to package instructions, drain and set aside.

Heat the oil in a pan and sauté the onion until translucent. Add the bacon and then the cabbage. Let it caramelize with a little honey and pour white wine. When the white wine has boiled away, add the Fleckerl and season everything with salt, pepper and nutmeg. If you like, garnish the pork roast with cabbage patties with chopped parsley.
