For the roast pork with apricot glaze, first peel the potatoes and sweet potatoes and cut them into pieces of any size. Place these as the first layer in a slow cooker.

Now remove all visible fat from the roast piece, salt and pepper it on all sides and sear it on all sides in a large pan. Then place it on top of the potatoes.

In the drippings, sauté the sliced onion and minced garlic, deglaze with water and stir in the remaining ingredients. Then pour the sauce over the roast pork and then put the lid of the slowcooker on.

Set the slow cooker to High. The cooking time is about 4 1/2 hours. The roast pork will be wonderfully tender and fall apart almost by itself.
