Season the roast beef with salt and pepper and sear for 3 min. on each side, remove from the roasting pan, cover and keep warm. Remove the skin from the onions and cut them into cubes. Clean the mushrooms, cut into slices and sauté with the onions in the frying fat until soft.

Season with salt and pepper and add beef broth and make 3 min, transfer to a sieve and refine the liquid with crème fraîche.

Mix mustard with onions, parsley and mushrooms and spread evenly on the slices of meat. Next, mix the semmelbroesel with the parsley and also spread over the meat slices form. Spread the butter evenly as a flake, and bake on the highest setting in the oven for 15 to 20 min.

Serve the sauce separately.
