Instructions:

Form the long grain rice in boiling salted water, cook at low temperature until al dente. Pour into a sieve, cool, rinse and drain. For the salad dressing, squeeze the oranges and limes, stir the juice with crushed maple syrup, chili, garlic-tomato ketchup, salt and Tabasco. Fold in oil with a fork. Clean celery, perhaps peel thinly and cut into fine pieces. Mix celery, long grain rice and salad dressing.

Cut melon in half, remove seeds and cut flesh into fine slices. Rinse, dry and core apple, also cut into fine slices. Clean lettuce and cut into strips. Chop the chives. Loosely mix all salad ingredients into the long-grain rice, toss and season with salt and Tabasco before serving.
