Instructions:

1) Clean squid under running water and cut into quarters lengthwise. Score squid quarters crosswise, then cut strips 5 cm long and 2 cm wide.

2) Clean broccoli, divide into roses and rinse. Peel stems, remove woody parts and cut into fine slices.

Remove garlic from peel and chop finely. Remove the skin from the onions and cut them into quarters.

3) In a saucepan, bring enough water to a boil. Blanch pasta for about 3 min (make bubbling), pour into a colander, rinse with cold water and drain well. Heat oil in a frying pan or possibly in a wok Add garlic, onion quarters and squid pieces and fry at high temperature for about 1 min. Stir constantly.

4) Add broccoli and fry for another 2 minutes.

Add noodles, soy sauce, fish sauce and sugar, stir well and turn to the other side while hot.
