Season the Rehnusslan with salt and pepper and fry in hot oil on both sides so that they are still pink inside. Keep the nut slan warm. Drain the oil and lightly dust the frying residue with flour. Deglaze with juniper brandy and wine, reduce and then pour in jus. Add the cranberries and juniper berries and simmer. Add butter together with sweet cream, season with salt and pepper. If necessary, thicken with a little cornstarch. Arrange the Rehnusslan and serve with the sauce and the cranberries. For the cranberry garnish, mix the cranberries with red wine.
