For the redfish with herb crust, rinse the fish with cold water and then pat dry with kitchen roll. Season with salt, pepper and the lemon juice.

Wash and finely chop the parsley and thyme. Heat the butter in a pan, add the breadcrumbs and add all the herbs. Roast for about 3 minutes and season with salt and pepper.

Coat the fish with mustard and spread the herb breading loosely on top. Now bake the fish in an ovenproof dish in the oven at 180 degrees convection for 20-30 minutes until golden brown.
