Instructions:

In a shallow saucepan, cover skate with cold water. Add vinegar, pepper and thyme and bring to the boil. Poach very gently for 8 to 10 min, allowing the meat to separate easily from the bones.

Meanwhile, for the dressing, mix vinegar, olive oil and shallots, salt and pepper and pour half over lettuce leaves and arugula form arranged on large plates.

Using a zester (hardware store), peel small strips from the untreated orange (or cut into very, very fine strips, but do not cut the white of the peel it is bitter).

When the skate is cooked, cut it into pieces and put them on the lettuce. Add the orange slices, the zest (strips of peel) and the tomato cubes as well and drizzle the rest of the dressing over it.

Serve with crusty white bread with garlic and olive oil.
