Cut the radish greens into small pieces, rinse thoroughly under cold water, shake dry and remove any unsightly leaves. Cut the radish greens into strips.

Prepare the radishes (prepare ready to cook, e.g. peel, remove woody parts and dirt) and rinse. Set aside 2 radishes per unit, slice remaining radishes. Chop the spring onions with greens In a frying pan, heat the butter. Sauté the spring onions in it. Add Noilly Prat and soup and make everything quiet together for 10 minutes.

In the meantime, finely dice the radishes set aside. In a small pan, sauté in the butter for 1 minute. Set aside. Just before serving, add the radish slices and leaves to the soup and blend finely with a hand blender or in a blender jar. Add the cream and let the soup bubble repeatedly. Season to taste with salt and freshly ground pepper. Serve immediately in warmed cups or deep dishes and spread the radish and chive mixture evenly over the top.
