Radicchio Salad with Salmon Rolls

For the dressing, mix juice of one lemon, salt and pepper to taste. Add the oil.

Remove the skin from the cucumber, first cut lengthwise, then diagonally in half, and shave into fine strips with a peeler. Mix with sauce and leave to infuse for approx. 1000 cmin.

In the meantime, clean lettuce and chop into bite-sized pieces. Select sorrel or arugula. Cut stems into small pieces. Rinse and spin dry. Roll up 10 sorrel leaves and cut into 2 cm strips. Rinse tomatoes, cut in half.

Roll up salmon, split into 2 cm wide pieces. Lift the cucumbers out of the sauce.

Offer all salad ingredients, drizzle with dressing and sprinkle with chives and salmon rolls. Remove the crust from the toast, fry it, cut it into triangles and place it on the table with the salad.

Tip: As an alternative to the fresh chives, you can also use the freeze-dried ones.
