Instructions:

For the Rabbit Rilette, mix all the ingredients except the lard and the oil and marinate for 12 hours. Drain the rabbit shoulders, season with salt and pepper and fry in hot fat.

Repeatedly add the rabbit shoulders to the marinade and cook for 6 hours at 100 degrees. Then leave to marinate for one night.

Remove the meat well from the bones, no pieces of bone should remain in the meat.

Warm the cooking juices slightly and strain through a straining cloth. Mix the rabbit meat with the cooking broth and blend well with the lard in a food processor until the rilette mixture has a coarse but homogeneous consistency.

Season to taste, pour into a terrine mold and refrigerate the rabbit rilette.
