For the quinoa vegetable loaves, wash quinoa with plenty of hot water and drain in a colander. Bring vegetable soup to a boil, stir in quinoa, cover and simmer over low heat for about 15 minutes, then let swell for 10 minutes.

Stir occasionally to prevent quinoa from becoming sticky. Peel and finely grate carrots. Halve peppers, remove seeds and cut into small pieces.

Clean leeks and cut into small pieces as well. Remove seeds from chili pepper and chop finely. Peel and wash shallot, dice finely and sauté in hot vegetable oil. Add finely chopped vegetables and sauté vigorously.

Remove from heat and add quinoa , freshly squeezed garlic and parsley. Season with salt and pepper and let cool. Add the eggs and breadcrumbs to the quinoa and vegetable mixture. Mix everything well, season to taste and let stand for about 30 minutes.

The mixture should be juicy but firm. Even out the consistency with bread crumbs or soup. Form loafs from the mixture with wet hands and roll in breadcrumbs.

Heat clarified butter in a frying pan and fry the quinoa loafs on both sides until crispy. Remove and drain on paper towels. Serve the quinoa-vegetable loafs as a side dish or main course.
