From quinces, which are largely already forgotten in our country, you can prepare a delicious compote according to this recipe.

Classification by the author: succeeds easily – inexpensive.

1. peel the quinces, cut them in half and scrape out the core and woody parts with a tablespoon. Using a pointed knife, remove the blossom and stem base. The quinces must be really ripe, otherwise the core can hardly be removed from the firm flesh.

Preheat the oven to 200 °C. 3.

3. sprinkle the sugar in a saucepan with the water and make the mixture until the sugar is completely dissolved. Add the juice of one lemon and the cloves. Put the quince halves in the syrup and make about 10 min on medium heat.

Place the quince halves side by side in a gratin dish with a rim about 5 cm high and pour the syrup over them. Cook the quinces in the middle of the oven for about 1 hour until they are soft and reddish. Cool.

Arrange the quince halves, rounded side down, on dessert plates. Fill each center cavity with 1 tsp. double cream, pour on a tiny bit of syrup, and bring the dessert to the table when cooled.
