For the quick guacamole, first halve and pit the avocados. Use a spoon to remove the flesh from the skin and roughly chop.
Place avocado in a bowl with lemon juice, olive oil, salt and pepper. Blend with a hand blender.
Cut dried tomatoes into small cubes.
Stir the diced tomatoes and parsley into the avocado puree and serve the quick guacamole.
