For the brownies, preheat the oven to 180 degrees. Melt half of the chopped chocolate with the butter either in a bain-marie or in the microwave and leave to cool slightly.

Beat the eggs with the sugar and vanilla sugar. Then stir in the chocolate butter mixture. Fold in the flour, salt and cocoa powder (be careful not to over mix) and finally stir in the remaining chopped chocolate.

Pour the batter into a rectangular baking pan lined with parchment paper and bake the brownies for 20 to 25 minutes. Let cool well after baking.
