Punch Glaze

For the punch glaze, heat rum and lemon juice and stir into sifted confectioners’ sugar. Stir with mallow tea to the necessary consistency. Do not stir too briefly or the glaze will not shine.

The punch glaze is correct when it thickly coats the back of a spoon.
