For the pumpkin soup, cut the pumpkin into cubes, put in a saucepan, pour a glass of water and cook at a moderate temperature with the lid closed for about 20 minutes.

Now mash the pumpkin. Bring the milk to a boil in a saucepan, add the pumpkin puree and unwashed long-grain rice, season lightly with salt and add sugar.

Cook over low heat until the long grain rice is cooked (about 20 to 25 minutes). Put the butter in the soup bowl, pour the hot pumpkin soup over it and bring to the table.
