Divide the defrosted puff pastry into 5 x 10 cm rectangles. Place on a baking sheet rinsed with water and bake in a heated oven at 220 °C for about 10 minutes. Remove the baking tray and sprinkle the puff pastry thickly with powdered sugar. Caramelize under a heated broiler until golden brown. Cool, turn to the other side and repeat the process on the other side.

Soak gelatin in cold water. Boil the whipping cream with the sugar. Whip the egg yolks in hot, not boiling, water until creamy. gradually add the hot sugar cream. Whip until the mixture becomes creamy. Allow the squeezed gelatine to melt in the hot cream and set aside to cool.

Crush raspberries and spread through a fine hair sieve.

Add strawberries and infuse a little. Stir the cooled, slightly gelling cream with orange liqueur and juice of one lemon until smooth. Fold in the whipped cream and fill everything together into a piping bag.

Pipe a little cream on four slices of puff pastry and arrange the strawberries on top. Pipe a little cream over the strawberries and place a slice of puff pastry on top.

Arrange on plates, dust with powdered sugar and pour a little vanilla sauce. Garnish with mint if desired.
