For the puff pastry sheep cheese pies, preheat the oven to 220°C degrees and line two baking sheets with baking paper. Roll out the puff pastry and cut into squares (about 7 x 7 cm). Whisk the egg yolk.

Mash the cheese and mix with nutmeg and parsley. Melt the butter in a pot. Sauté the flour in it and gradually stir in the milk and cook until the sauce is thick.

Stir the cheese into the sauce in small portions. Then remove the mixture from the heat and let it cool down a bit. Stir the egg yolk into the mixture.

Fill the puff pastry squares with the filling and fold them into triangles. Press the edge together with a fork. Bake the puff pastry sheep’s cheese pies in the oven for about 15 to 20 minutes.
