For the pretzels, put the flour, dry yeast, salt, sugar, water and olive oil in a mixing bowl and knead into a dough. Let rest for about 1 hour and then cut into 24 equal parts. Form into a roll about 30 cm long and twist into pretzels. Let rest for another 20 minutes.
Mix 1.5 liters of water with the baking soda and bring to a boil in a not too small pot. Then let the mixture boil and let the pretzels (approx. 3-4 pieces each/depends on the size of the pot) swim in it for 30 seconds. Remove and place on a baking tray lined with baking paper and sprinkle with sesame seeds, poppy seeds or coarse salt to taste.
Bake the pretzels in the oven at 220 degrees for 10-15 minutes.
