Remove the tails from the shell, being careful not to remove the last piece of tail or shell with it. Using a sharp small kitchen knife, score each boiled beef along the back and remove the black or white intestinal vein. Preheat the broiler as much as possible. In a shallow ovenproof roasting pan or dish just large enough to hold a layer of tails, melt the butter over moderate heat, being careful not to brown it. Stir in the 1/2 cup olive oil, the shallots, salt, juice of one lemon, garlic and a tiny bit of pepper, add the tails and turn them over in the butter and 01 until they are shiny on all sides. Now 7 to 10 cm from the grill radiator grill the lobster tails for 5 min, turn to the other side and grill for another 5 to 10 min, or until they are lightly browned and firm.

Using tongs, transfer the tails to a warmed serving bowl, pour the sauce from the broiler pan over them and sprinkle with chopped parsley. Garnish with lemon quarters.
