Instructions:

Mix flour, water and approx. 1 tsp. salt to a smooth dough. Form several small balls from the dough and roll out a little. Coat the dough with oil and let it rest for 20 minutes. In the meantime, slice the potatoes and mix them with the two eggs, the finely chopped onions, salt and pepper. Spread a tablecloth on a table and draw out the dough portions one after the other. Brush with a little oil, spread the potato mixture on it and roll it up. Repeat this process with the other dough portions until both the dough and the potato mixture are used up. Now layer the dough rolls either in the shape of a snail or, depending on your preference, in a baking dish. Bake in the oven at about 200°C for 20-30 minutes. At the end of the cooking time, boil a little water with salt and pour very lightly over the finished pita.
