Instructions:

Sauté onion and leek slices in fat, dust with flour and continue to sweat until colorless.

Add potato slices, fill up with light beef stock and cook until soft.

Strain soup, heat and season with butter, whipped cream and a little nutmeg.

Sprinkle the soup with parsley. Offer roasted white bread cubes (croutons) separately.
