For the potato soup, peel, wash and coarsely dice the potatoes. Sauté in butter. Add soup and continue to steam for 20 minutes.

Wash radish leaves and chop very finely. Wash radishes and chop into slices. Add radish leaves to soup and blend with hand blender to puree.

Stir in the crème fraîche and season with salt, pepper and a pinch of sugar.

Heat the radish slices in the soup.

Sprinkle the potato soup with cress and serve hot.
