For the potato parcels with mushrooms, tomatoes and herb potatoes wash and brush well. Pre-cook in steamer over steam for about 15 minutes. Do not peel.Preheat oven to 200°C.Coarsely chop mushrooms, quarter shallots, finely chop garlic.Place two large pieces of aluminum foil, spread half of the potatoes, mushrooms, shallots, cherry tomatoes, garlic and a sprig of thyme on each.Drizzle each with 1 tsp. olive oil, salt and pepper. Close the aluminum foil tightly and cook in the preheated oven for about 10 minutes. For the herb curd, stir the curd with mineral water until creamy with the help of a fork. Add the chopped herbs and caraway seeds and season with salt and pepper. Place the potato parcels on plates, open and serve in the foil with the herb curd.
