Cook potatoes in a little water for about half an hour, cool a little, peel and cut into thin slices. Mix crème fraîche well with pepper, sea salt, nutmeg and finely chopped parsley. Remove the skin from the onion, dice finely and sauté in hot fat. Add the large chopped sauerkraut and sauté briefly. Cut the apple into fine slices and add to the sauerkraut with the juniper berries. Pour in vegetable soup and simmer on low heat for about 10 minutes. Layer the potato slices and the sauerkraut alternately in a greased gratin dish. Pour the crème fraîche over it and bake the casserole in the heated oven at 180 °C for about half an hour. Sprinkle with cheese 10 minutes before the end of the cooking time.
