Instructions:

For the pork tenderloin skewers with lime-papaya sauce, first prepare the marinade: For this, mix lime zest, ginger, coriander, turmeric, finely chopped garlic, honey and yogurt in a bowl. Stir in 1 tsp oil and season with salt and pepper.

Rinse the pork fish with cold water and pat dry. Cut into strips about 3 cm wide and place in the marinade. Cover with foil and marinate in the refrigerator for at least 2 hours.

For the sauce, peel the papaya, remove the seeds and cut the flesh into cubes. Peel the cucumber, remove soft interior and finely chop the firm flesh. Also finely chop the onion and quarter the tomatoes. Remove seeds from chili pepper and cut into very fine rings. Mix all ingredients to a sauce and let it sit for 30 minutes.

Thread the strips of meat lengthwise onto the skewers in a wave-like pattern and roast in the oven or on a charcoal grill for about 6-8 minutes until the meat is cooked through.

Serve the pork tenderloin skewers with the lime-papaya sauce.
