For the gratinated pork medallions, heat lard in a frying pan. Salt and pepper the medallions, then sear them on both sides. Toast bread slices, cut each slice into about 12 cubes, place these toasted cubes in a baking dish.

Pour the seared pieces of meat over the toast cubes, pour the water to the leftovers in the pan and boil once. Pour this liquid over the meat, top with slices of cheese and place the chopped bacon on top.

Bake in the oven at 220 degrees for about 15 minutes, until the bacon is crispy. Arrange the baked pork medallions and serve.
