For the pork loin with zucchini ratatouille and vegetable mince, salt and pepper the pork loin a little. For the ratatouille, chop the onion and garlic, cut the zucchini into small cubes and finely chop the carrot.

Sauté the onion and garlic in a little oil, stir in the tomato paste and the carrot. Add the polpa and the corn and let it simmer for a while. If necessary, add a little more water. Season to taste with salt, bell pepper and paprika powder.

Cook the pasta machlokes al dente according to the package instructions. Fry the pork loin in a little oil until it is cooked and serve the pork loin with the zucchini ratatouille and the vegetable mince.
