For the pork fillets in lemon sauce, mix some pepper, saffron and flour and roll the meat in it.

Heat butter in a pan, add pearl onions and fry the meat in it all around. Deglaze with chicken soup and add lemon juice and zest.

Stir in the spices and sherry and simmer, covered, for about 20-30 minutes.

Then remove the fillets from the pan and slice immediately.

Stir mustard and flour into the sauce and let it thicken.

At the end, arrange the pork fillets on plates, spread the lemon sauce over them and serve the pork fillets in lemon sauce.
