Pork Chop with Apple Vegetables From the Tray

For the apple vegetables, wash and quarter the potatoes. Peel the parsnips and cut into bite-sized pieces. Core the chili pepper and cut into thin strips, core the apples and cut into thin slices. Cut the garlic in half lengthwise.

Mix well with vinegar, 7 tablespoons olive oil, honey, salt and pepper on a baking tray. Roast in the preheated oven at 160 °C (convection oven) for about 20 minutes.

Meanwhile, season the chops with salt and pepper. Heat 3 tablespoons of olive oil in a pan and sear the meat on both sides. Place on top of the apple vegetables and roast for another 10 minutes.

Finally, pluck the mint leaves from the stems, chop coarsely and mix into the finished apple vegetables.
