A delicious mushroom dish for any occasion!

Soak the mushrooms in water for 20 minutes. Squeeze out, collecting the soaking water.

Boil the boletus water with the stock.

Sauté shallots, mushrooms and long grain rice in butter until translucent. Pour 1/4 of the stock. Cook risotto for approx. 20 min. while stirring, gradually adding remaining stock.

In the last 5 min. add spring onions and tomatoes.

Season with salt and pepper, sprinkle with Parmesan cheese and serve.
