For the poppy seed sticks, preheat the oven to 200 °C convection oven. Cover a baking tray with baking paper. Put raisins in a small bowl and cover with rum and let soak for at least half an hour.

Mix poppy seeds, sugar, vanilla sugar, lemon zest and soaked raisins with enough eggnog to make a spreadable paste. Roll up puff pastry and cut each sheet into 3 strips.

Fill each strip with 1/6 of the poppy seed cream and roll up. Place the rolls on the baking sheet with the cap facing down and brush with a little milk. Bake for about 15 minutes until golden brown and let cool. Cut the sticks into quarters and serve.
