Poached Char Filet Roll with Basil and Vegetables

Instructions:

Place the char fillets skin side down on a board, salt and top with fresh basil leaves. Roll up and place one roll in each buttered coffee cup or mold. Add 1 Tbsp stock, some Noilly Prat and a knob of butter and place in an unperforated container. Cover with foil and place in steamer. Place the vegetables in a perforated container, season and also place in the steamer.

Arrange the vegetables in the center of the plate, place the rolls on top and pour the stock from the molds over them a little.

Potatoes tossed in lemon butter taste especially good with this.
