For the plum sheet cake, mix flour, baking powder, sugar, vanilla sugar, salt, butter and eggs with a food processor. Wrap the dough in plastic wrap and refrigerate for about 1 hour.

Wash the plums, cut them in half and remove the stone. Score the top edge once. Preheat the oven to 180 degrees. Roll out the dough on a floured work surface.

Line a baking tray with baking paper. Place the dough on it. Prick it several times with a fork. Place the plums close together. Then bake for about 40 minutes (depending on the oven).

Then transfer the baking sheet to a cooling rack and let cool. Sprinkle with a sugar-cinnamon mixture. Let cool very well.
