For Plum & Madeira, cut half of the pitted plums into small pieces and puree the rest in a food processor.
Mix the pieces with the puree and carefully stir in the preserving sugar.
Bring the mixture to a boil and simmer for 4 minutes until bubbly. Season with cinnamon and Madeira.
Immediately pour the plum & Madeira into well-cleaned jars and seal them tightly.
Invert the jars and let stand on the lid for a few minutes.
