For the plum cake, crumble flour with butter, quickly knead with powdered sugar and the yolks to form a shortcrust pastry.

Leave to rest in a cool place for 1/2 hour. Roll out dough and line a baking sheet with it. Pre-bake for approx. 6 minutes. Cover with plums.

Beat yolks, sugar and vanilla sugar until fluffy. Stir in the remaining ingredients. Beat egg whites with granulated sugar and fold into yolk mixture.

Spread the mixture on the cake. Bake in the preheated oven at 190 °C for approx. 45 minutes.
