For the pineapple muffins, drain the pineapple – set aside 12 pieces. Mix flours, baking powder, salt and coconut flakes, add the pineapple pieces.

Beat egg, add sugar, oil, yogurt until smooth. Fold in flour mixture. Fill the muffin tin 2/3 full and place a pineapple chunk on top of each.

Bake at 180 degrees convection oven for about 20 to 25 minutes.
