Instructions:

Singe the bristles on the pig’s feet over an open fire (candle or long matches) (or singe from the butcher), clean and make in salted water 2 to 2 1/2 hours. To the salted water add vinegar and an onion peppered with bay spice and cloves. Cook the sauerkraut as usual and arrange the fusilli on it. Garnish with finely chopped parsley.
