For the pepper steaks, first crush the peppercorns. Season the steaks with salt, sprinkle with the peppercorns and press them firmly into the meat. Pour the oil over them and marinate for about an hour.

Then fry the steaks in a frying pan with half the butter until not quite done, remove and keep warm. Pour the stock into the pan and let it reduce a bit. Stir the butter into the liquid and fold in the whipped cream, seasoning if necessary. Return the meat to the pan and simmer briefly. Place on plates and serve the pepper steaks.
