For the baked pears, preheat the oven to 180°C degrees. Blanch the pears in boiling water for 1 minute and then rinse with cold water. Then peel off the skin of the pears, cut them in half, cut out the core and cut them into wedges. Divide the wedges into four small ramekins. Mix the brown sugar with the cinnamon and sprinkle over the pears. Pour the sour cream over the pears and sprinkle with the granulated sugar. Then bake the ramekins at 180°C degrees top heat on the top rack until the sugar on the baked pears is nicely caramelized (about 3 minutes).
